wine and/or beer? I'm more interested in the beer side of it personally, but am a serious noob as far as storage is concerned. I don't have a cellar in my small-azz house, but I do have a garage. Can I make it work? What style beer should I be aging? Is my old lady going to shoot me? Why do I feel the need to stockpile cigars and alcohol?

Beer not much worth it as it is a finished product. Very very few "age".

Robert, not necessarily looking to change the flavor and make the beer "better" over time. I'm just thinking of how long a beer will hold I guess. Do I have to drink them within a certain time frame or can I collect and consume them over time?

LOL, I have a hard time keeping more than a case on hand due to consumption. I'm just thinking of putting some of the htf stuff on a shelf and saving for special occasions and what not.

You can... beer can keep relatively good for extended time as long as it doesn't bounce between say fridge temp and warmer temps.. this will spoil the beer. If you dont plan on drinking right away, buy your beer on the shelf and keep in a "cellar" temperature type environment. Sure that at low 70s kept wont hurt it.

Garages here get over 100 degrees.. so, you know I cant say anything about yours, i'd say not, dont store there.

My local has stored several beers and wines in his humidor.. that'll be consistant environment for the beer.



Sure others will be along with better advice..

Its only worth it if u are making your own and need to age.......but make sure its not hot in there

Don't listen to Robert..

Several beers age very well. Stouts, in particular barrel-aged, Barleywines/Lambics/Sours etc.

Typically speaking, the higher the ABV..the better it will do with aging..but that's not a hard and fast rule, as many sours/Lambics have a lower ABV than say a RIS.

Im aging Stouts and sours...and thats about it. I don't have a cellar either...but do have a space under the stairs that doesnt see any light (key), and stays nice and cool (another key).

Same concept as cigars as it is with beer Robert. I'd point you to the google machine if you're actually interested in learning about aging beer.

Buying 2011 Deschutes Abyss for instance. They suggest this particular beer won't be at its best until 11/2012.

You're right Kipp...the 2011 isn't best buy 11/2012. It's 8/4/12. The 2010 was 11/15/11...which is what I was remembering.

The Black Butte XXIII however, THAT one is 6/2012.

I found the 2011 to be fantastic fresh. Hell, I thought the same about the 2010 as well. I wished Id gotten into craft beer earlier so I could do a full line flight sampler from 2006 on.

as only hinted at earlier, light is beer's enemy...and caps may not always last. Caps may have more to do with going flat after a while, though most beers/ales aren't meant for aging anyway. But light is bad for any brew.

I'm with KPP and Kipp. Barley wines, Russian Imperial Stouts, Scottish wee heavys, Big Belgians, Smoked beers, and stronger porters.

I still have my 4 bottles of Dark Lord from 2010 in the cellar. And starting to make some bigger beers now that I'm making all grain.

Just don't try to age an IPA. Those are supposed to be drunk young and do NOT improve with age.

Thats why i still haven't opened the bottle you sent me. Also, was told by the folks at 3Floyds brewery that if you can wait on it , their Dark Lord is at it's peak after about 4 years.

In our house, with a crazed 7 yr old, named El Destructo, terrorizing us on a daily basis, a case of wine can age anywhere between 1-4 months max, before it meets its intended use.

Thanks for all of the info bretheren, I'm thinking my bigazz marine cooler in the garage will have to work for now. I'll put away a couple of bottles a month and see what happens. Although I didn't enjoy the 120 minute so much fresh, I'm thinking of putting a few away for a long rest and seeing if it mellows any. Cheers! Beer
