If you're making Carolina style barbecue just save you some time and buy a ham at the deli counter. It's about the same.

Local outfit offers Alabama sauce. First time I've ever seen white BBQ sauce. Wife likes it....I can't get past the color...for the most part, I find the regional distinctions amusing and with a lot of overlap, it would be challenging to categorize many in a blind taste test....for me anyway. As long as there's more zing and less vinegar taste, I'm good with most of them.

Hell, I live in Alabama and I don't understand the draw of the white sauce. Mrs. Monkey is equally baffled.

We know seafood, we know pasta, we're almost good at knowing steak, and we will someday be good at knowing BBQ.

Case in point.
At a picnic last year.
A large foil pan with ribs falling off the bone while getting a slight char on the grill.
Can't go wrong, right?

Completely devoid of flavor.

Find out they're boiled, baked, then grilled to get some black on them.
And topped with Hunts BBQ.

yum...?



That's not BBQ and EVERYONE knows it.

Case in point....you need to have some friends that know how to cook!

The white sauce is for chicken, not pork or beef.

Big Bob Gibson's white sauce for chicken (guess one can use it on what ever they like):

2 cups Mayo
1 cup distilled white vinegar
1/2 cup apple juice
2 teaspoons prepared hourse radish
2 teaspoons ground pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper

Mix in large bowl and use as marinade, baste or dipping sauce. Store in air tight container in the frig up to 2 weeks.

Mikekoz, I've never had good pork outside of Texas and Louisiana unless it came off a whole hog. I just don't get why the hell people just want to shred apart the meat, if you're doing that, you might as well just make carnitas, the taste is just so much better imo.

Seriously? The only good pork comes from cooking a whole hog? Guess I'll have to set aside 20 hrs and empty my fridge to store the 120 lbs of leftovers next time.

Don't get me wrong, I love me a good pig roast but to feed a few mouths and have some leftovers for lunches, I think a whole pig is a bit overkill.

No disrespect meant here, however, if you had some of my pulled pork you would forget about that Texas crap.

Just kidding, brother. I do make some of the finest pork shoulder around though. At least that's what I've been told.

I do like how the TX people season their meats, however. Don't need much more in a brisket rub than salt, pepper
and chili powder. For pork I might add some raw sugar and maybe some granulated garlic.

Most people over think this stuff and put every seasoning they have in a rub. Same with injections.

The KISS method works for smoking meats. Keep It Simple, Stupid.

When you taste an authentic Carolina sauce you will know it. To me that style is way too vinegary for my tastes.

I like more of the Kansas City or Memphis styles. YMMV, of course.

In eastern Carolina, where my Mom's Family still lives, pork isn't pulled, it's chopped

Visiting Texas is on my Bucket List so you never know.........Herfing ...... maybe I'll even bring you a jar of Uncle Roger's Sauce. Herfing

Late to the party, but my family owns a BBQ join that specializes in eastern NC style whole hog, chopped w/the vinegar sauce.

1 cup white vinegar
1 cup cider vinegar
1 tablespoon brown sugar
1 tablespoon cayenne pepper
1 tablespoon hot pepper sauce (e.g. Tabasco(TM)), or to taste
1 teaspoon salt
1 teaspoon ground black pepper

Yep, that's pretty much the one I used. Except the one I found had some mustard and little bit of a couple other minor additions that I don't remember off hand but pretty much the same as you laid out above.

It came out pretty good.

If I use McDonalds rib sandwich as an example of BAD BBQ, why are talking about awards and stuff?

It's a common phrase to say "there is no bad pizza" or "there is no bad sex". etc.
Well, I've been to pizza hut. And let me tell you: the sex is terrible.

Bucky... I have a bbq sauce recipe I am willing to share with you. It's a mixture of Carolina mustard/vinegar and KC ketchup/sweet.

Sounds weird... tastes fantastic. It's spicy, but if you don't like spicy, you can dial it back to suit your taste.
