The Islands franchise also ask you how you like your burger cooked and do not put warning statements on their menus about under-cooked ground beef...Think

I'll eat a medium well burger at home but I was surprised this was being offered at a restaurant.. the reasoning is what really got me tho... Is Angus somehow immune to bacteria and stuff..?? Think

Yeah no. Beef is beef; when it comes to ground, we're banking that the beef is ground in house. You can typically have a burger cooked to medium without issues most places that serve fresh never frozen beef but the fact remains there's a minute chance for e coli.

I always order my burgers medium rare. I've only had maybe 1 cooked that way. No one seems to be able to cook them less than medium. If the meat is ground in house and kept properly there is almost no risk.
