So there's a wine thread and a whisky thread, how about a cheese thread? Because I know there's a least one whiny rat hanging around here who certainly must have some opinion. I can't narrow it down to just one cheese. I like too many of them.

Aged cheddar. Provolone. Mozzarella. Feta. Swiss. And it also depends on the application. Pizza? Sammich? Burger? Cheese steak?

But I gotta say, Ol' Cameroon seems to be enjoying quite a few time outs... you'd think he'd learn to either change his behavior or be more subtle.

Red rind.........or as me old Irish Grandpappy called it "rat cheese".Still love that stuff with crackers,meat market sliced bologna and summer sausage.Many a weekend fishing trip,with a loaf of bread and mustard,that's what we survived on.

I'm a fan of the stuff I got from my grandparents, and my mother in law still gets the same old world stuff via snail mail.

Graskaas/Meikaas are the family cheeses from Friesland region of Netherlands. It's a farmer's cheese, like a fresh gouda. I don't know the difference in name, they taste the same to me, I figure from the name it's grass cheese and milk cheese depending either on cow's diet or production age. The old folk in my family get offended if you can't tell the difference from graskaas and meilkaas. Spose it's probably not unlike the difference between cigar wrappers and age.

My favorite is Komijnekaas. It's a mildish flavor but very rich and creamy cheese with spice from cumin seeds. Don't know the base, I'm assuming it's a gouda, most Dutch cheeses are in that category.. Well aged and firm kominjekaas lasts for a reasonable amount of time. It's got a mildly funky spice flavor to it, but it's a definite spice flavor / instead of a wierd cheesy moldy flavor. Hard to describe if you haven't had it. I get a wedge every year from my in laws. It's rich, so a pound usually holds out for at least 6 months or more. I've never finished it, usually gets too furry to finish.

Manchego, a goat cheese from Spain, but it I also like dryer cheezes like aged parmesan and sharp cheddar.

I like to leave cheese open in the refrigerator and allow it to dry out, cheese jerky is delicious.

+1 Any blue cheeses, gorgonzola or totally disgusting, Kraft powdered/ground "parmesan" undoubtedly a chemical warfare ingredient.

I’m pretty open to all cheeses - from Brie to Cheddar, Parmesan to Gorgonzola. I still believe nothing beats American “cheese,” i.e. Kraft slices, make the definitive grilled cheese. But, then I’m also a sucker for Kraft Mac and Cheese. I agree wholeheartedly with Gene regarding the Kraft grated Parmesan.

I also find it that anything made by Sargento seems oddly flavorless.

Can't say I have had many "fancy" cheeses, at least that I know of. Pepperjack is my favorite though, I could put that stuff on just about anything...except maybe waffles...that would be gross...
