Ok, Let's think of humidity being like a little bitty bird and the bag, cooler, tupadore, ziplock bag like a little bitty bird cage. If you open the cage then guess what, the bird escapes and you are left singing bye bye birdie. In order for the cage to hold the bird there has to be no way for the bird to escape. If it does escape you have to do something to put the humidity back in it such as a boveda pack, a water pillow, distilled water etc. Once you do that the bag unless, not sealed or has holes in it or you open it, will hold the humidity.
