Recommended me some menu items for the weekend or confirm my choices. Feeding people in bulk. Need to crank out the food quickly in the morning, and needs to be portable. Lunch needs to be light and portable. Dinner needs to be filling, deliverable in a foil pack, but not rushed or portable as everyone should be pretty much done for the day and able to sit/lean.
Right now for breakfast I've got sausage patties egg n cheese on English muffin. Potatoes O'Brien with egg and chorizo in tortilla. Tortillas stuffed with shredded taters, tomato, egg, bacon, peppers, onions. And tortillas with spinach mushroom onion cheese egg and sage sausage.
Lunch menu bratwurst and sauteed onions, Chicago style hot dogs, hamburgers with the fixins, and grilled chicken Caesar salad wraps.
Dinner menu pork chops, fajitas, pulled pork and slaw, and jambalaya. Grilled sweet corn once or twice.
Going shopping over the weekend to try to get holiday sales. I'm open to suggestions if anyone's got some. First time with food as an official duty, I wanna do it well. I have to make some vegetarian meals too, but pb&j sammich sub ain't hard to do.
I'll have a large boil pot and burner, electric griddle, two small tabletop grills, camper stovetop and oven, crock pot, and charcoal kettle grill. Could bring my smoker too. On the fence between pulled pork in the smoker vs crock pot
I think the pork chops is the weakest meal. I've done it for two years well received but pretty much only for dudes that came to the camper and had a table and chairs. Accompanied by collard greens and cornbread but I don't think I can make it work within budget constraints.
Looking to do 15 dudes 3 meals for $150/day for 4 days. That's what I'll be getting paid. I can do it, but I wanna make the food worthwhile as well.
