Out of season. Ground is already frozen. And even if it wasn't, nosey deer hunters are everywhere now. Any work not somplteted by mid September has to wait for after the Spring thaw.

I put a pot roast in the crock pot this morning, after browning it in a cast iron pan. Seasoned with kosher salt, fresh cracked pepper and a bit of cumin. Carrots, potatoes, onions, garlic... in a nice gravy made with beef stock, a splash of red wine, tomato paste, woostahshire sauce and a bit of corn starch. Dinner gon' be gooder'n a backseat bj.

Well... maybe not that good.

My fellow Sgt's and I are cooking burgers and sausages for the team on Monday in honor of Veteran's day. 2 of us are vets and a few guys on the team are, too.

Better than brisket I assure you...….makes great sliced beef sammiches.You ever smoked an entire chuck roll?I pick them up at 12-15 lbs...….my favorite smoked beef.

Nah, not that simple. Got to gut 'em and have High and low weights or the bloat raises them to the surface. At least that is what I heard on the inter web.

Watched a fair amount of that one. UFC had them down but didn't finish. Iowa v Wisconsin and LSU Baja tomorrow. Both should be fun.

I'm not a fan of beef in general except when it's thin sliced and heavily seasoned on french bread at Portillos.

But I figured I'd give it a try for $2/lb.

Turned out really good. Probably Should be wrapped it halfway, the bark is pretty hard. But I shredded it and gonna use for sammiches later.

Happy Saturday folks. 63/84 here.

Gotta clean up the '65 Vette for the three day Goodguys national car show next week. Thinking of running it through the autocross course a few times just for kicks. I would for sure iffn' I had swapped out the original engine but don't want to hurt the old girl.

Sounds good. I take chuck throw it in the crockpot with a jar of peppercinis (pick your heat level), some chopped garlic and some fine diced onion and let it go on low all day. Come home, stuff it in a roll of your choice and love life.

Good stuff.

Train to the city, wandered around the museum for a few hours and train back home. Traffic was terrible coming back, took an hour and a half to get home from the train station 12 miles away.

Smoked beef with garlic sauce on a pretzel roll.

Beer.
