she did say she wasn't feeling well when we started and she didn't look her usual alert self .... another co-worker and I both offered to re-schedule the meeting, but she insisted...

it wasn't until after we finished talking business and chit-chatted that she spilled the beans...she didn't have any rashes on her neck or face or hands, but she told us she had rashes on her back and her abdomen...

I got very little sleep last night, thinking about the wife's accident and my insurance going up... estimate to repair her car was $3861. New bumper, hood, paint, and labor putting everything back where it belongs.

It's driveable and they'll have the parts next Monday... so she'll get a rental car for a week or so when she drops it off.

I need a beer.

Some of those companies charge more premium on the front end, hoping you'll go accident free for long enough you end up paying for your own claim as you go. Then the insurance company looks like the good guy. Brilliant marketing.

Got some boneless pork chops from Sam's Club. They're about 2" thick. I seasoned 2 of them with my homemade rub and 2 with salt, pepper and granulated garlic and vacuum sealed them. I've got them in a 148 degree water bath for 2 and a half hours and then I will pan sear them in an olive oil/butter mixture.

I won't cook steak any other way now. Sous Vide that ribeye for 2 hours at 130 degrees and then sear it outside on my sear burner. Perfectly done every time with that nice crust from the sear.

This is my first time doing pork chops... wasn't too sure about temp. The video I watched recommended 145 and I was thinking closer to 160 for pork, but I figured I'd go 148 for the first try.

my only issue with the sous vide is the same issue I have with the keurig... if a plastic water bottle sits in a hot car, you're not supposed to drink it because the warmth leeches dioxin from the plastic... how is it then safe to cook in it or run hot water through it?

You should be fine with whole muscle pork. The USDA dropped the recommended temp a few years ago. 145 is now GTG. Anything ground still needs 165.

Yeah... the chops are delicious. My rub is awesome on pork shoulders, and it was good on the chops, but I liked the salt/pepper/garlic one better.

Very tender, pretty moist. I think 145 would have been perfect.
