just did rapid tests. no cooties.
hostess asked for a few couples to do the tests and come over for dinner.
A real NYE party with some of our closest friends, and it's TLC's birthday today too.

There's no way next year can't be better than this horror was, is there?

I've got zero symptoms right now... aside from a slight light headedness, which is prolly the 2 beers... so I betcha I got the covid!!

no symptoms here either. they're very close friends and this makes all comfortable so it doesn't bother us.
close enough to walk, but gonna drive anyway. not planning on getting hammered so not a real concern.

I have extra test kits so if you do get symptoms, just mail a measurable amount of snot on a q-tip to a PO Box as yet set up.

Just had a fresh, choice, 1.5" Costco NY strip. I picked the most marbled package. We grilled one medium rare and the other medium at 650F over charrcol on the BGE. Both sucked! Dry taste with no flavor. Even put butter on it like some steak houses do and it still sucked. Aldi's Black Angus NY strip is much better and probably cheaper, IIRC.

I would not buy another strip steak at Costco again unless it was prime- and the prices for those were just off the wall. We have never had a problem like this before with any Costco meat, fish or fowl. Last summer we bought prime "tomahawk ribeye and they were beyond belief.

On a positive note, fresh boneless chicken breast was back to it's pre-pandemic price of $2.99/lb. Gas at Costco is down from like $3.79 (WaWa) to $2.85 at Costco over the last couple months. It's been a long time coming.

We have been making giant, awesome crab cakes every New Year's Eve for the last 20 or so years, but not this year. The cost of jumbo lump crab meat went from $24 for 12 oz to almost $40 for 8 ounces, since just last year. Checked prices at largest local seafood store, Costco and Publix. No way that those prices have any chance of sustaining. Demand at that price probably approaches zero.

Now, stone crab or maine lobster are another story, but we'd just end up spending like $250 tonight just for the three of us to pig-out for like 10-15 minutes... like we were at Joe's Stone Crab or at Lobster Pound in Maine again! Did Joe's overnight one year for New Year's Eve and the friends we had over to join in thought stone crab sucked. They got divorced. Serves them right for such blasphemy. LOL. Brick wall

Robert... if I may be so bold...

The first issue was your choice of cut. NY Strip steaks blow. Almost as much as NY blows. Ribeye is the way to go. Fat = Flavor. The reason the tomahawk was so good is because it's a ribeye.

Second... cooking and seasoning matters. Pull your steak 2 hours before cooking and season it with kosher salt and fresh cracked pepper. Let it rest until room temp. Ideally you would sous vide the steak until internal temp of 125 degrees. Then sear it.

If you want to reverse sear it, then hit it at the 650 for 2 minutes a side and then get it away from the fire, off to the side of the heat, until 125... then rest under tented foil for 10 minutes.

If you really want to blow someone's mind... sprinkle it with a little granulated garlic and onion powder. Just a sprinkle, as both are potent.

That's my $.02

Robert, MACS is spot on. I never reverse sear. I use pepper and a no salt spices blend due to my heart issues. I rest the finished steak 10 minutes under foil. Usually I pan sautee mushrooms and onions to top with.

Crazy family left yesterday, rain seems to have finally stopped, wife went to bed at 9, so I am sitting out back with a belly ache smoking my first cigar in a week.

Made Ribeyes the MACS way, pan seared scallops in bacon fat, grilled brocollini and giant baked potatoes followed by ice cream sundaes for the kids.

Last week, we had costco prime tenderloin cuts. Son first quickly seared each side at 650F on the BGE, then baked and basted with butter, garlic and rosemary in an iron pan put back on the BGE until perfect. Lucius!!!

We tried the first two yesterday the exact same way and they sucked. We later simply grilled the other two to perfectly medium rare and their flavor was just OK. Nothing more.

I'm just bummed because it's the first time I ever had anything bad from Costco meat and always felt I could count on high quality. Most important, I was really looking forward to a franking good steak last night! Brick wall

Freakin' rained solid , then most, then drizzles, then rinse and repeat for the last 48-60 hours here in central PA
