Back in the day, "Huli-huli Chicken" was a big thing. Ewa Brand chicken did fundraising events. They brought all the equipment and of course, their chicken, you did the pre-sale tickets, supplied the location and bulk of the workers. Kiawe wood and the rub they used gave the cooked product a unique taste. "Huli" means to turn in Hawaiian so the constant flipping of the chicken led to people calling it "huli-huli chicken" since every so often, the racks with the birds would be turned and moved over. Eventually Ewa Brand trademarked the phrase so whenever I hear the term, I automatically think of the smell and taste.
