Have always used pectin...can be a bit " thin " without it. But if your heart is set on pectin free...here's a recipe

The key seems to be to use fruit that already possesses pectin naturally.

I've always had good results with the UGA canning/ food preservation guides:

I typically do not use pectin and I cut their sugar recommendations by 30%. I also cook to a lower temp for a more "marmalade" like texture.

Busy AF with work, brother. Production numbers are up, so old machinery is breaking more often, plus we are expanding. I'm wearing about 6 different hats around here right now.
