We begin processing and roasting the Halloween/Thanksgiving pumpkins after the Thanksgiving holiday. We freeze some of the processed pumpkin so we can enjoy some in the Spring. But we give all the fresh loaves away over the Holiday to friends, co-workers and LEO's my wife works with, the guys that work in our PO, the garbage men, irrigation man, professors, Local Fire Dept, bartenders, budtenders, etc. A lot of friends give us their pumpkins instead of them throwing them away.
My kids are in college now. A couple years ago we made over 12doz loaves. Pumpkins where bad last year due to a drought. Pumpkins this year are very meaty and sweet out here.
