They're a delicious anise based cookie. You make them in essentially a waffle iron (with different patterns on the press). ..
I've never found store bought ones that weren't disgustingly hard. They're supposed to be a soft cookie.... not dried out to all hell.

I may take my mom's pizelle maker home with me some day and try my hand at it. I'm sure her recipe is in the recipe box.

Found recipes for Cucidatis and Anginettis that my grandmother used to make.

Scaleilas... I may be spelling it wrong.
Mom and grandma would run dough through the pasta press until it was thin, cut it into strips, braid the strips and then deep fry them. After they cool they are covered in a heated anise honey.

Similar are the pig ears... same thing just a different shape

My biological father's side of the family comes from Northern Italy. Our family gives a rooster pitcher to friends/relatives as a house warming gift, and we even gave one to our Realtor when we bought our home. It's an old tradition.
A Bishop with our name served in Genova an Foligno until he retired in 1981, and there's still a villa/farm in the Umbria area that carries our name.
There has always been a rift between Northern and Southern Italy. It is also one of the great battles within our family as my mother's family is from Southern Italy with the same name as a harbor city in northeast Sicily.

Heh... my mom's family is from a tiny village somewhere along the toe of the boot... can't remember the name. I believe their main activities were highway robbery... feel free to run with that as you want...

These are a big tradition on my dad's side of the family. I've never been a big fan of them personally, but everyone else raves about them.

Actually, there are a lot of things we agree on if you can look beyond certain perceptions.
