Ok today starts the process of ageing it. I will be checking it every 14 days. Once I get it to where I like it I am going to be bottling up 100 ml bottles to send out to buds and those that are interested in trying it. Make sure to PM me to let me know an addy to send out some. Beer

PS: This is not for trades and stuff like that this is just for sharing with my B and S OTL.

LOL I guess you could call it that. More like Kitchen Bourbon lol. I do not keep the barrels in the garage though due to no temp control out there. I have a spare closet in the house with lots of space. Temp stays at a more consistent lvl. That way the oak barrels dont get to hot and we lose to much to the angels share by contracting and expanding to much lol. I am greedy you know lol. fog

Yes sir it sure is, I am already wanting to do a 10 gall setup, get a couple of larger oak barrels. Years ago I knew allot of the old hillbillies in the hills of NC that made it all the time. We would hang out at the stills but never paid no attention at how it was made. I wished I had paid more attention back then but such as life lol. Beer

Yes it would have to be 51% or more. I am using 70% Corn, 16% Wheat, 14% Barley Hence Van Winkle lmaoooo as in Pappy

Sounds like a good mashbill,should lend toward the sweeter end with the high corn and wheat combo Beer

Lmaooo this is why you throw the heads away but that is the least of the worries seeing how I am using a old truck radiator lmaoooooooooooooooooooooooo... Joking of course. I make 5 gallons of mash runs, rule is to get rid of the first oz per 5 gallons of mash which is 29.5735 ml. I collect the first 60 ml and throw it away for safety purposes. Also its very easy to tell when the methanol has boiled out due to it does not smell like fingernail polish and taste like **** lol. Back in the day the old school boys would leave the heads in the mix for a bigger "Kick" which is why blindness would happen. Gonz Just in case you didnt know lmaoooo.

you got it brother also the higher wheat in my opinion makes it smoother but thats just me lol

Congrats, my son started out brewing beer on the kitchen stove
after burning out sever burners he switched to a propane set up and
is now brewing 300 gal at a time with atleast 6 new beers on tap
. This was his main desire, stay with your passion and best of luck.

Now that sounds like it would be fun to do. If I still lived in Biloxi MS I would absolutely have a set up like that.
It seems boiler setups like that are cheaper in Biloxi because of all the craw-fish boils they have there. I do miss that place. lol

I have never tried my hand at beer but dearly love the stuff. Mercy, 6 on tap talk about bragging rights. It is amazing how here in TN I have read about how many started out making such and now they own large breweries. I know I would never be that good nor be able to invest in such but a man can dream for sure lol.

But the stroke has rendered him bad wif numbahs...3 samples of Ewok Van Winkle, way more than palatable btw, and a trio of cigars. Deal breaker, I'm afraid.

hitchhikers were a three foot long Oliva G, RP Super Ligero (nh) and RP Royale (nh), the latter of which is looking like it wants to vaporize tonight, with one sample snort for sure!

Lmaooo well I do try for sure, I dont think I could change if I wanted to. I am sure the wife would appreciate it if I could lol. I tried to pick out some smokes I thought would go well with the drink. Granted all I could use is my imagination to decide but sometimes I get lucky. Not often but sometimes lol.

Not an uncommon story for the industry. 10 barrel system is a decent size, what brewery does he work for (or own), Rich?

used to be Cambria Beer co. until Kendal Jackson winery sued him to
stop using the name Cambria, Why you may be asking! They (70 miles away
heve a line of wines called Cambria, they felt that that the public would
be confused. It was cheaper to change name & all his advertising. They have
deeper pockets than Aaron does.

Recieved a care package from Chris today. I definitely recommend the Ewok Van Winkle. The apple butter is outstanding as well. Plus he sent me some hitchhikers.

Thanks, next time I'm passing by that way I'll make a point to detour into Cambria and try out 927 or have someone pick up a growler since it doesn't look like they have bottle or can distribution yet.

Yeah, I know how that goes with the big guys and deeper pockets.

Yeeee Hawww!!!!!!

Got another 1/2 gallon made up and barreled last night. This little run has a bit of a twist on it. When I had decanted the last batch out of the barrel, I refilled it with Sherry. So this run will be the same recipe but barreled in a Sherry cask which I think will make it very interesting. We shall see in a few weeks Bwahahahahahahaha. Then from there is where I will be retiring that little barrel for putting the awesome Habanero Peach Hot sauce from TMCTLT in to let it age which will add a hint of Sherry and Bourbon to it and that I think will go together GREATTTT cause you just cant beat fresh peaches and bourbon lmaooooo.

Now I have a new 2.5 gallon medium char oak barrel coming in Tuesday. I will be curing that barrel with Tequila 100 percent blue agave which will make a Tequila Reposado. Ummmmm Hummmmm. Then from there I will have to decide what to make and put in it. Any suggestions would be appreciated. Herfing

That Tekillya sounds pretty tasty.......as far as what's next I'll defer to someone more creative than myself.......I'll be making those smoked ribs with your apple butter as a finishing sauce next week.

It is my pleasure for sure. I am very glad you like it, Oh yea I bet that LFD made it 10 times better for sure. Let me know what you think of the Apple Butter when you get to try it. Remember if it should taste like crap make sure to say so brother. Also any suggestions that anyone would think of that could make it better is very much appreciated. Beer

It's been a while, but my buddy and I tried it tonight.... thought it was really good. I had aged some moonshine in a barrel a while back, and it was pretty good, but this put that to shame...

Ewok's wife's apple butter is da bomb...I have to pass on this stuff now...my diabetes is getting worse...
