6 here and not much wind. Going above freezing tomorrow around noon followed by rain and wiil be there until late Thursday. I may get a cigar in today before the heat wave and rain hits. May try to get out tomorrow or maybe just wait till Thursday or Friday. Still need to finish shoveling the driveway and cleaning off the vehicles.

Laid my younger brother to rest yesterday, putting his cremains in a vault at Rose Hills....three services since Thursday...grieving in public is tough...
He was a gentle, kind, compassionate and spiritual man of God, a minister for the Christian Reformed Church who started as a youth pastor and finished by helping various local churches and their clergy evaluate and improve their services to their congregations...

he perservered through many life-threatening illnesses, including two kidney transplants, partial liver failure, multiple heart surgeries for installation of stents and pace-makers, three decades of kidney dialysis, before his body/heart finally gave out...

Brother Dan,

Rman hit it on the nose.

I personally cook dried pintos for 50 minutes and I do the pressure release at the end instead of letting it release pressure on its own.

For anything that calls for a natural pressure release I just tack that time onto the cook time +/- a minute or two and I release the pressure manually. My guess is if you cook them say an hour you would have re fried bean paste instead of beans lol.

Tips

Do not salt the dried beans as this keeps them from softening, salt after cooked that is if you use any salt.

If you soak your beans prior to cooking this will cut down the cook time. The times I use are for dried beans that are just washed and Not soaked.

If you want you can throw in a ham bone for seasoning, or a piece of fatback. I prefer ham bone.

How much water you use is up to you, I prefer about 3 thumb widths above the dried bean level or 3 inches.

They say pintos, out of all the other types of dried beans, requires a longer cooking time using conventional pots. I use this as my base for deciding times for other types of beans. As I am still learning this thing.

Last tip, If you decide to buy an instant pot, get the largest you can find. Moms got me the 8 quart. If it was smaller which they do sell, I would be in deep dodo lol.

I have started a folder on my PC that I keep my recipes because I cant remember chit. Once I find the right amount of time and water etc for my taste on each, I move that recipe to a completed folder with the appropriate changes. It is a huge learning curve from what I am accustom to cooking with as far as times and such. It has been ages since I have used a regular pressure cooker. I can say from my experience so far on the instant pot 1: the food is just as good and tender as using a standard weight driven pressure cooker. 2: Cooking times are drastically decreased from standard cooking times when using conventional pots and pans. I know I love this thing for sure.

Yeah, chunk beef chili took about 45 minutes, pulled pork took about 50 minutes, chis wings take about 20 minutes from frozen, and then 3 to 5 in oven to crisp em up...this thing cooks fast and so far everything has been delicious....there is definitely a learning curve for sure, but like Chris said, try recipes and see what works for you, and then save them with the times you used....you do need to add 10to15 minutes for pressure up, and at least 10 minutes natural release of pressure,or do a manual release

I am assuming which I hate doing, that you put the sauce on after you crisp em up?

I love wings brother. I like the taste of em when crisped but I have a hard time eating them due to dental issues. I will eat them non crisped and love em just as well. So I am wondering, drowned em in buffalo sauce and cook in the pot. Think that will work? Reason I ask is I am thinking this will infuse down to the center of the chicken wings as well vs just a coating. Man now I am thinking about a honey based hot sauce damn it.

Oh yeah, I have the 8 qt model....cooks a ton of food, so you can freeze some....or feed 4 plus with a second serving

For sure! I have googled looking for recipes. A lot of them are outside my taste preference. I am looking hard for those "Southern Style" recipes. For instants, your chix and dumplings would be right down my ally. Pea soup not so much lol. Tatter soup Hell Yeah! You know where I am coming from. If you should figure out the Chix and dumplings shoot it to me. I will throw my redneck twist on it and replace the chix with rabbit or squirrel!

Dang. Guess I'll get me one of them things. I have too many cooking devices but this sounds like it would be great for home and camping. If I can knock 9+ hours off the cooking time for beans, worth it right there.

I do load my beans with all kinds of stuff though. Celery, onions, bell peppers, hot peppers, tomato, and a fatty smoked pork lump or sausage are my usuals. Does everything cook down to mush in that short of time? Just doesn't seem to compute in my head. I know the pressure helps but all those things tend to be slow breakdown which is why usual cook times are overnight or morning to evening.

Is there something special about the instant pot brand that does anything differently than any other pressure cooker?

Seems to save her time most of the time. But sometimes it doesn't pressurize properly or something?

As far as other brands, I don't know about them...I think the instant pot has been around the longest, and they have worked out the bugs...it just seems like that's the one that comes highly recommended, and I'm pretty happy with it....ymmv

13 this morning and it's on the rise to above freezing. Rain after noon sometime and it may get all the way up to 50 tomorrow with more rain. Flood watch in effect with frozen ground and no where for the water to be absorbed. Gotta go out and finish the driveway and make sure drainage is cleaned up.

I am going to say that I would assume, which again I hate doing, that it would cook that stuff down to mush pretty dang fast. Since the dried pintos does cook down to mush that fast then everything you listed should as well.

I know what you mean all to well about such quick times not computing. This is where I run into my biggest learning curve with this thing. As to why and how it does it? I wanted to know this as well. I thought maybe the instant pot used a higher PSI but I was wrong. I done some research and this is what I found. The high-pressure setting on an instant pot reaches a maximum of 12 to 12.5 psi. This is a lower psi than traditional stove top pressure cookers, which reach about 15 psi up to 21 psi depending on the weight used. At 12 psi, the fibers in vegetables and meat break down quickly, allowing foods to be cooked in a short amount of time than with conventional pressure cookers at higher pressures. It was the total opposite of what I thought. Higher pressures actually cause slower cooking times. I guess the laws of physics change when it comes to pressure being thrown in the mix.

The thing I like the best is first, throw all in the ingredients, set time to cook and you can also set a delay on when to start cooking then walk off and forget it. It cuts on and off on its own and it goes into warm mode if you have that option set.

Ex: I put everything in at 12ish pm, set the delay timer plus the cook time to start so it will be done by 5pm, 5pm rolls around and I fell asleep some where, Wake up at 7pm and go in the kitchen to eat and crack open the pot. It is like it just finished cooking, food is pipping hot, tender and ready to eat. All that is left to do is eat, put away leftovers, wash the pot and go back to doing what ever. The simplicity of it for me is perfect. I would trade every other pot I own for one of these things. Well, except the little pot that Mandobro sent me and my wrought iron pan. A man has to have something to cook his cornbread in.

I have not had any issues with mine as of yet. I am also adamant about making sure everything is in working order prior to each use. The rubber seal, the pressure vent etc. All it takes is one small bit of an ingredient between the seal on the lid and the pot to cause a pressure leak.

We have a very small kitchen with limited counter space and cabinets. But there will always be a place for the Instant-Pot. You can get rid of any slow cookers and pressure cookers, so it actually might save space.
