Busted open another of my new hot sauces, Butterfly Bakery smoked onion to use on my pizza. Pretty mild, maybe one level above Tabasco. But it's tasty. I think it'd be great for a tabasco sub on hashbrowns and eggs. Has a great smoked onion flavor. Too runny to use effectively on top of pizza cheese. Doused a slice and ate it, dipped breadsticks in the drippings.

Wife was not amused with the hot sauce orders. Told me I have bottles in the fridge pushing 7 years and I "never eat them". I do eat them, but they're extracts in the 1 million SHU and up range and a miniscule amount goes a VERY long way so naturally they last a very long time. To prove my point and cause I was already thinking about it before she complained about my existing excessive collection, I took the oldest (and hottest - Mad Dog 357 Gold Label) out and dipped a toothpick in the sauce to the halfway point of the toothpick. Then I poked it in a dozen little holes in the cheese, and dragged the sides across the rest. Sauce was only faintly visible at the puncture sites. I actually like the taste of this sauce but it's so fxcking hot it's practically inedible.

Almost instant sweating. Took my jacket and hat off and finished off the slice. Drank my beer avoiding a mouth exhale, only mouth inhale. It's been 25 minutes and I'm still a little moist and my lips are still tingling. No regrets.

I threw out a pound of taco pork I made with a half teaspoon of it mixed in while I was cooking it because it was too hot to eat. It's not my hottest sauce, but the hottest one I have open. I have some 3-6 million SHU straight extracts and a jar of pure capsaicin crystals but I don't plan to ever open them.

I think I did more today at the house then I did all week at work, I'm tired. Coffee time, shower, then watch the Hawks game on TV. Then when everyone goes to bed relax with a cigar.

Dan there used to be a Nassau Bahamas style bbq joint in Des Moines that was a family run business. It was called big daddy’s bbq. Big daddy (RIP) was awesome. He would come out to entertain customers and was just a nice big jolly dude. I can still hear his voice.

He made a whole series of hot sauces that were not available other than asking him and signing a waiver. They were made with peppers from his families island. He would get excited if you asked him about them and would let you try them on toothpicks and meat samples increasing intensity each time until he felt you couldn’t go any higher. He would check your pulse and look in your eyes etc. it was a show. After he made you quit he’d give you free popsicles, milk or key lime pie to try to recover. He ruined a few of my afternoons lol.

He also had a contest. On his top two sauces if you would give him $$ up front (it varied but one was $500) he would make you a chopped beef sandwich on a hamburger bun with the meat immersed in the sauce. If you could eat it in the specified time he would cater a party for you. If not he kept the money and donated it to the food bank. He went years without anyone beating it. He was on letterman, national news etc. he did sent multiple people to the er.

Finally someone beat it. A dude wanted his wedding catered and brought brought a bunch of bottles of milk of magnesia with him. I guess it was ugly but he did it.

Big daddy was awesome. I miss him. His general sauces may still be in the grocery stores around Des Moines but when he died so did the hot sauces and his family shuttered the restaurant. He was bigger than life.

That sounds like a great dude TW.

I might've given it a try tho. Short of a Trinidad Scorpion mash and Carolina Reapers, I can eat some wicked hot pepper mash in a decent quantity. Extracts however kick my azz. Even milder rated extracts, it's the way they go through me. I can feel every twist and turn as it courses through my gut up until the sudden emergent painful but relieving evacuation. Peppers and natural non extract sauces burn going in and for a bit in the stomach, but I don't feel the burn again until it's time for the sudden emergent painful but relieving evacuation.

I've done several signed waiver hot wing challenges. I've yet to find a restaurant offering that I can't handle, but if there was one, it'd probably be at a bbq joint like that.

I've never done well with change either. It might be a while until we all adjust to Ram's abdication.
We we were spoiled, took him for granted.

.they don't let you look at Mao very closely, I'm not sure it was actually him.

Got to eat some stinky tofu, some lamb tripe and a variety of other tasty things yesterday... Then just passed out after a beer.

Very well could be. I do have some natural sauces with Trinidad scorpions and Carolina Reapers that wreck me tho, but those are pretty recent inventions.

I've not eaten at this location, but I did buy some rib tips and greens from him at the flea market in Gary many many years ago. He used to run a trailer pit at the flea market and I stopped there a few times while out on jobs when I was a mechanic.

I used to get them from a Mexican aide once a year. Her kids school had an annual fundraiser all the abuelas would get together and make a bunch of tamales for the school and sell em for $10/doz and I'd load up.

But her kids are out of that school now. I asked her if she'd get me some anyway and she said no.

Asked another one and she told me to go up to the harbor (east chicago) and stop at any mexican store. I want the good chit. The homemade masa and stuff. I've had the tamales from a couple stores up there and they're not as good as handmade abuela tamales. I assume they use premade masa. Finding a place that makes everything from scratch is a bit harder. The place in Indy does, but I'm not paying $40/doz... I'll pay $20 if it's the real deal.

There's an old lady that sells em out of a minivan in north Hammond, but you never know when or where she's gonna be out there.

I'll find me the good spot eventually. Only started thinking about it the last couple weeks when I realized the fundraiser tamales never came up.

Years ago my job would take me down to Marble Falls TX for a few days once a month or so... there was a dude selling homemade tamales out of his van... turns out he was buying from Sam's and reselling them... tourists prolly didn't know the difference... Mellow

Flying to NYC today. Overnight in NYC, then flying to flyover land the 13th.

Didn't want the long layover, but was significantly cheaper and was business class... So free booze and nice seats

Welp. Now I'm sleep deprived and on some tequila bull****. Wife handsqueezed some likes and made some simple syrup n chit mixed em up and gave me a margarita.

Didn't take much to push me over the edge. Should probably head to bed but I really don't wanna be up before 5.
