Watching the Gridlife livestream down in TX at COTA. Regret staying home now. I didn't want to drive, but had someone I could ride with. Would be nice to get to warm weather and racetrack fun times.

Chopped the lightly smoked pork belly. Put half in the freezer. Cubed the other half and put in my Dutch oven with a bunch of garlic and a handful of onions.

Fried that together for a while and tossed in some shiitake mushrooms, baby corns, bean sprouts, bamboo shoots, carrots, cilantro, kimchi, and scallions. Made a sauce with chili paste, sesame oil, soy sauce, lime and kimchi juice that went in as well.

Stirred in a few eggs and a little bit of leftover lime carnitas. Simmered a while and put 3 cups of cooked white rice, stirred it up. Now gonna let it sit on low heat for a little longer.

Hope this concoction turns out.

My "fried rice" turned out fantastic.

Savory, with crunchy veggies, and good spice kick.

I've had the canned veggies for almost a year, had planned a stirfry on the menu for the first Gridlife event last year but it didn't happen. Had to make something to use em in.

The pork belly wasn't fully rendered, so still spitting out chewy pieces of that. Otherwise the flavor and texture are spot on what I was looking for.

Done being productive for the day. Waiting on dude to come buy my gun, and then it's beer n videogames for the rest of the day. I did call into work to see if I could work tonight but they don't need me.

Gonna hit the garage with a Party Short.

When I'm off work for a while I raid the pantry for things that haven't been used in a while and try to come up with something to use them up.

Give it a shot, just throw chit together in a cook order that favors the ingredients and see what comes out in the end.

I'm adventurous with food, there's pretty much nothing off the table for me. Wife and boy are picky, and when I'm catering Gridlife events, I've tried slightly adventurous menus but find most people just want familiar stuff. If you're open to new foods, throw something together and see what it is!

Wife went shopping, 6yo son has his birthday buddy that stayed the night last night over. We have been doing science experiments for hours. Don't have everything for potato clock. So I decided to look up bill Nye the science guy on YouTube and let them watch him for a bit. I need a break lol. Can't wait till tonight when I can relax with a cigar and watch the Blackhawks

It's pretty nice today... That strange temp where you're cold from the weather, but the sun still makes your skin feel hot. Not a bad morning.

Watching the neighbors shovel snow off their driveway still...

Took the wife to breakfast at a new place. Pretty good. I had a Brisket eggs bendect. Very good. Their "house potatoes" are a rift on O'Brien potatoes and were excellent. Good coffee too.

Got a pot of red beans, andouille, ham hock and such on the stove. Red beans, rice, and cornbread for supper. Grandson in the house. Nice day so far.

My last old Colt revolver is gone.

Gonna/already regret it, but made $200 on it for just having in my safe for a few years. Got it on trade for a GSG-5 that I wish I never got rid of.

But it was a good deal when I got it. I shot it a few times, fondled it more. I'll miss it.

But now I've got $1000 in a coffee can in the gun safe. Will either go to deductible on wife's car or maybe a new toy for the safe.

Made pork chops last night. I was going to do jalapeno cornbread, but the kids are here. So I'm doing the bacon grease cast iron skillet corn bread. I love that bottom crust it gets!

My Vette won a Best Of Show award at the All Chevy car show. Not sure what the judging criteria was but there were about 250 cars there so it was a lot more than I ever hoped for. I really don't care about awards as driving and bench racing with others is what I like.
