I think the real effect the neck has is that the booze only has a tiny amount of air to interact with for along time and it just 'steeps'. I have a feeling if I were to open a new bottle of WP10yr and pour out the first glass and let it sit overnight exposed to the air, the whiskey in that glass would lose that grassy taste.
If you wanted to prep a new bottle, it might make more sense to pour out a glass or two's worth a few days
before you plan to drink it, then either drink what you poured out (that has had fresh air for a few days) or pour from the bottle that has had fresh air for a few days. Wait, that might be exactly what you were decribing. I need more coffee.
