Does Anyone Else Eat Chia Seeds?

You probably remember the Chia Pets, but chia seeds are highly nutritious, and have been used as a food source for hundreds of years. They are loaded with protein, calcium, magnesium, anti-oxidants, and contains more Omega-3 fatty acid than wild salmon. They help to normalize insulin levels, and reduce fat and cholesterol. Plus they're a high source of fiber.

I put them on my Gluten Free Rice Chex w/Coconut milk in the morning. Add them to my salad for lunch, and snack on chia pudding (2 TBS chia to 1/2 cup coconut milk and sweetener of choice). Good stuff, and a real energy booster.

Not by choice. I'm allergic to every dang blasted thing under the sun. Gluten, soy, dairy, tree nuts, peanuts, chick peas, shellfish, corn and caffeine. I also have hyper-insulinism, which means no cane sugar, corn sugar, honey, agave nectar, etc. About the only allergan that doesn't bother me is eggs.

I'm always trying to find new things to eat, that don't trigger an allergy.

Actually Paul, chia seeds are becoming very popular. Used to be you could only get them online, or a health food store, but now Trader Joes and even COSTCOs sell them.

FYI, COSTCOs sells them for around $5 a pound. About half what others charge.

We will have to see if our costco has them... costco in ny is crappy compared to the sf bay area when it comes to organic and health foods.

do you use straight chai seeds or chai and flax seeds? I saw both today and wasnt sure what to grab. i am a huge fan of flax seed as well but wondered if theu would be just as good mixed with the chai?

Tom,
In order to get the full nutritional value out of flax seeds, they need to be ground. Whole flax seeds will go right through you. Some nutritionists have referred to chia as "flax seeds on steroids". Plus they're fully digestible, so there's no need to grind them.

I'm 55 years old, and today I had to dig 10" x 32" deep footings for a carport I'm putting up next week. The ground was pig iron (about has hard as concrete). A 6' sharpened breaker bar, slammed into the ground with all my weight behind it, would penetrate and inch or less (and even made sparks). Slam the steel bar into the hole with everything I have a dozen times, then clean out less then an inch of dirt. Repeat 40 times per hole. After the first hole, I was spent. Sat down, drank some water, and ate a few spoonfuls of chia pudding. 5 minutes and I was ready for the next hole. I got them all dug, and I really don't think I would have without the chia. I had a little trouble getting out of the truck and walking into the house, when I got home, though, lol. YMMV.

Jamie,
I read somewhere, that if you're allergic to, or just want to avoid eggs, you can replace them in baking by mixing 1 TBS of flax meal with 2 TBS of water per egg, and allowing it to sit for 15 minutes before adding to the recipe.

Sure dude. I work construction, but due to my allergies, I've had to create my own recipes. Here's one I made a couple nights ago. whip

BROWNIES

1/2 cup Earth Balance natural buttery spread, melted (corn, soy and dairy free)
1 cup of my proprietary sweetener blend (coconut palm sugar, Xylitol, Erythritol)
2 eggs (the one allergan I don't have problems with)
1 tsp unsweetened vanilla extract
1/3 cup Chatfield's carob powder (caffeine free)
1/2 cup Hodgson Mill gluten free pancake mix (whole grain sorghum four, brown rice flour & flax meal)
1/4 tsp salt

Mix everything together, and bake at 350 for 20-25 minutes.

...and no, I'm not ghey.

you ever substitute butter with coconut oil (solid)? I heard about it, of all places, on Dr. Oz. started doing it and it works quite well. tastes good, especially on some toast, and is one of the best fats we can eat. i was never a huge health buff but have changed things quite a bit due to my situation with my wife. i've never felt better (besides this damn back issue i have now) and never knew eating healthy can be as good as it is. just my $ .02

oh and thanks for the info. i never knew flax had to be ground to be worthwhile. i did hear about the egg substitute though, but never tried it yet. anxious to try the chai pudding!

Dude, that's young! Did ya try soaking the ground first? We live in black land area and the ground gets hard as rocks and have seen 6" cracks in the ground during the hot summer months.

Thanks DP - I was just pulling Jaime's leg saying what I could envision him saying...

My wife and her friend who is a raw chef got us into the superfoods. I gave her a lot of grief about going to cooking school to be a raw chef, what do they do? teach you how to chop for 3 months?

But our friend loves it and is now in Barbados doing the cooking thing, teaching yoga and surfing. Not too bad as opposed to when she worked with my wife as an animator doing 60-80 hrs per week and getting laid-off at the drop of a hat.

I've used coconut oil, but it's kind of bland. Now I usually use the Earth Balance Soy Free spread. A mix of expeller pressed coconut, canola, safflower, flax and olive oils, plus is tastes pretty close to butter. Non-GMO and vegan too. Available at Walmart. Make sure you get the "soy free" one, as their original is made from soybean oil.
