I make two recipes one traditional Herbed Dressing..

But here is the Crowd Favorite,,

Ingredients
4 tablespoons rendered bacon fat
1/2 cup hot pork breakfast sausage
1 medium onion, chopped
1 stalk celery, diced
1/2 green bell pepper, diced
1 clove garlic, minced
2 cups peeled crawfish tails, chopped
2 green onions, chopped
1 small jalapeño pepper, chopped (optional)
1 teaspoon chopped fresh parsley
Leaves from 1 sprig fresh thyme
2 tablespoon Creole spices
6 cups crumbled basic cornbread (store bought stuffing mix)
2 cups chicken stock
1/2 cup heavy cream
2 eggs, lightly beaten
Salt
Freshly ground black pepper

Preparation

Put pork sausage into a large skillet and cook over medium-high heat, breaking up the pork with the back of a wooden spoon. When the pork sausage meat has browned, add the onions, celery, bell peppers and garlic and cook, stirring occasionally, until the onions are translucent, about 5 minutes. Add the crawfish and cook for 2 minutes. Transfer the mixture to a large mixing bowl.

Add the remaining ingredients to the bowl with the sausage and crawfish and stir together until well combined. Spoon the dressing into a large heatproof dish. At this point, the dressing may be covered and refrigerated (for up to 1 day) until you are ready to bake it. Bake the dressing in a preheated 350° oven until it is piping hot and golden brown, 15-30 minutes

Mmmm Mmmm Mmmmm

As much as I enjoy Thanksgiving and being with family, I never developed a liking for any stuffing.

i'm not much of a cook, but what I am good at is eating and that recipe you have there Wheel sounds fantastic!

I've had oyster stuffing, which is big in the mid Atlantic but never any with crawfish.

I'll trade some smokes for a vacuum sealed tub of that!

Learned this from Betty Crocker 25 years ago and still my favorite:
3/4 cup butter or margarine
2 large celery stalks, chopped
1 medium onion, chopped (1/2 cup)
9 cups soft bread cubes (15 slices)
1 1/2 teaspoons chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/2 teaspoon ground sage
1/4 teaspoon pepper
cooked, finely chopped neck meat and giblets

cook onions and celery in the butter til softened and toss it all together

Wheel has a coronary when someone puts beans into a chili recipe, yet he boldly submits his "Non-stuffing" stuffing recipe.

I"m not saying it isn't tasty. In fact, it sounds delicious.

But it taint stuffin.

There is nothing "turkey" about it.
No neck or giblets.
And it's not even stuffed into the bird.

So while you're standing on the chair at the stove top, rendering your bacon and being careful not to bruise your sprig of fresh thyme, try to think of an appropriate name for this dish.

Now excuse me while I go pick up the ingredients for my famous 5-bean venison chili.

lol! there's absolutely nothing wrong w/ Cinicinnati chili. not my fav, but still tastes good to me. My ex father
inlaw had a chili shop called Americas Chili. it was the first time i had chili w/o beans and loved it. 3 way if I
remember correctly.

i've always thought that Texas chili was made with beans but maybe Wheel can set us straight...

I have to tell you, my father made the absolute best chili and he made it with red kidney beans. my wife makes
the best white chicken chili with all kinda beans.

sorry for the thread jack Wheel!

Don't they put cincinnati chili on spaghetti?

That's more blasphemous than beans in chili.
