Hog,

I hear awesome things about Platinum cookware. It's priced way beyond my means, but if I was in the market for something really special, I'd check into it. My son's mom treated herself to one skillet in the Platinum line and absolutely loves it.

Good luck!

We had Calphalon and returned it.

We purchased Circulon in it's place and love it. Not to say that Calphalon is not good stuff.

Here is a link from where we purchased ours. Regular prices are high but they actually have great sales.

Circulon is another good choice ...

Be sure that it's oven-safe, whatever it is ... handles from pans and lids need to be able to go into the oven ... not some plastic stuff that will melt there

Rick, you never cease to amaze me, as long as it's not political. You're really a great guy.

All Clad is the professional's usual choice; 18/10 stainless, but it is very expensive. Sam's Club has a knockoff, under the Wolfgang Puck label, in 18/10 stainless that is 1/4 the price of All Clad. It's beautiful cookware that will last a lifetime. Depending on how your wife cooks will determine what kind of handles you need. If she sears meat in a pan atop the range then places it in the oven to finish cooking, be sure the handles are 450 degree oven safe. All Clad handles are 18/10.

Only buy one pan with a coating (Teflon, etc.) for frying eggs. Teflon inhibits proper carmelization when searing meats and fish.

We have 2 Calphalon pans and we rarely use them. The idea is cool but in practice...

I think a good teflon coated pan is much better. Calphalon is not truly non-stick.

Hey Hog,
My wife is a cook [we eat well. LOL!]. I asked her opinion and she says that T-Fal or WearEver are the best to buy.
Hope it helps.

All, It really depends on how you cook and what you cook. I use hard anodized aluminum non-stick for alot (Anolon & Circulon made by the company I work for and Calphalon Commercial by the competition) and some clad metal (aluminum on the outside and stainless steel interior - KitchenAid cookware {ours under licence} All Clad {the competition}. Both types are even heating. The Non Stick is easier to clean up and you can use little or no grease - the clad with stainless is better if you are going to deglaze the pan (add liquid and disolve the bits that stick to the pan - usually for a sauce).

Again, it comes down to how you cook, what you cook and personal preference. Other non-stick aluminum should preform comparably with the hard anodized, for a time but will not last as long. Plain stainless with a large impact bonded base (a disc of aluminum encased in stainless bonded to the bottom of the pan) performs nearly as well as clad metal at a much lower cost.
