Mofongo is made from plantains (the green banana, not sweet) and a fusion of fresh condiments, such as sofrito, a sauteed base mixture that combines such herbs as recao, coriander, and oregano with cured salted pork backs, ham, achiote (lard colored with anniatto), garlic, onions, tomatoes and green pepper.
Another seasoning sauce that is used a great deal is adobo, which is a different concoction used on beef dishes.
Some of the local favorites include tostones, aranitas, pastelon, piononos, amarillos, bacalaitos fritos, alcapurrias and pastelillos.
Many of the dishes are marinated or seasoned with tropical fruit juices .. and creates a mouth watering delight for the taste buds, and their cookery is customarily known as 'comida criolla'.
