Johnny Cash's version of "Hurt" would be my top pick. fog
The Les Claypool Frog Brigade's version of the whole PF Animals LP is another top five.
Ella Fitzgerald's live version of "Mack the Knife" would be in my top five.
I've always liked Phish's live version of "Loaded".

Funny, Buckwheat, I often list 'While My Guitar Gently Weeps" when discussing covers, but I'd never heard that one. I very much dislike the original, but I love Jeff Healy's version.

Peter Frampton does a pretty good version of it as well. Peter also does a pretty good version of "Black Hole Sun"

2 of my favorite albums are cover albums.

Good rockin' tonight: the legacy of sun records and true love - toots and the maytals.

Actually the toots album is all toots remakes with other stars. The willie Nelson version of still movin is Awsome.

I feel that way about a lot of covers...

but hayseed dixie I like because they aren't trying to improve the original... they're turning it into a stringed bluegrass piece... and they really are some of the most talented musicians around... if an instrument has strings, they can play it masterfully...

Dwight Yoakam's "Under the Covers" album is pretty good.
