Turkey Enchiladas

Made two large lasagna pans this evening,excellent!

Ingredients
4 cups shredded Cheddar and Monterey cheese blend
2 med onions, chopped
2 (2 ounce) can sliced black olives
50 (6 inch) corn tortillas
2 (19 ounce) can red enchilada sauce
6-8 cups cooked turkey, chopped in food processor
8-16 oz Sour cream
Cilantro


Directions

1 Preheat oven to 350 degrees F (175 degrees C). Lightly grease two
extra large baking dishes.
2 In a large bowl, combine 2 cups cheese,3/4 cup enchilada sause,turkey,
onion, and black olives.
3 In microwave heat tortillas 12 or so at a time.Remove and dip in
enchilada sauce to coat.
4 Add turkey and cheese mixture to center of tortilla, roll and place
in the prepared dish. Repeat until bottom layer of pan is covered with
enchiladas.
5 Spread remaining sauce on top and Bake 20 minutes in the preheated
oven,sprinkle with remaining cheese mixture and bake for an additional
5 min, or until cheese is melted.

Top with Sour cream,chopped onion and cilantro.

jjohnson28, you impress me with your cooking posts Ive noticed. I love to cook also. In fact My wife loves my cooking. We have a deal going. I cook, she cleans up! I love it. I cooked thanksgiving dinner this year. Happy cooking. Mag

Yummers!! Looks great, Johnson. I'll have to give it a try. Maybe even my son will eat this. It would be nice to have something besides Del Taco.
