Talk About Torture

My wife made enchiladas today actually frying the tortillas first and using hatch valley chili peppers. The fragrance is phenomenal but they are not yet done and it's not dinner time. Not to diminish any actual suffering, but the wait is torture.d'oh!

Waterboard her with Enchilada sauce until you have the secrets!

Also, can I please come over for dinner?

I marinated some skirt steak last night. Grilled it today and the wife and I had some with steamed veggies (broccoli, cauliflower, carrots, green and yellow squash).

Lemon in a beef marinade?
I don't think I've ever done that.

Gene, do you mail order those chiles or are they available to you locally?

Locally, but they are in cans with the Hatch label. Sad We can buy other chillies locally, but not Hatch.

When we lived in Texas we went camping in New Mexico about the time a new crop of chilies was in. The local supermarket had fresh roasted and freshly ground chilies, the small was fantastic.
