I have a recipe for steam roasting a Canada goose (also works with wild turkeys) that involves portabella mushrooms and port being made into dressing. The best dressing I've ever had.

Here's an idea I tried cooking up a mess of dove, but would probably work with Cornish Hens also.

Melt some butter in a wok, or skillet
ad some worcestershire sauce, cayanne pepper, and a dash of curry powder.
put fowl in to brown, and keep turning/stirring to prevent sticking, and to ensure all sides get in the butter mixture.
When the bird is about done, turn the heat down, add sliced rings of onion, then bell pepper, then at last chunked up tomato.A
dd a can of undiluted tomato soup concetrate (like Campbells, but don't add the water)
taste and reseason with the worcestershire, cayenne, and curry powder to taste (the soup thins out the taste, I tend to like mine on the spicy side) when the taste is right, cove put on lowest possible heat, and cook up some rice, while the rice is cooking, the seasonings have time to flavor all the gravy. stir occaisionally.
serve over the rice. tastes like a combination of Italian/Cajun Food

Timoteo's Mushroom Marinara Sauce

Dice 2 medium yellow onions and 4 cloves garlic, saute until translucent. Add two links Italian pork sausage, remove casing and crumble, saute until brown. Add one sliced portobello, four sliced Crimini and two sliced ****ake mushrooms. Saute 2-3 minutes, add white wine and cook until reduced. Add 1 box of Pomi marinara sauce, 1/2 cup chicken stock and 1/2 cup red wine and let simmer stirring ocassionally. While simmering cook your pasta, penne or farafalle are my favorites with this, to al dente. Once the pasta is done and draining add 1/2 pint heavy cream to sauce, stir then add pasta to sauce, stir and let simmer for about 5 minutes to let the pasta finish cooking. Note, save some of the pasta water and add to sauce if you prefer it thinner. Dump contents into large pasta bowl, sprinkle with chopped parsley and serve. Serves 8-10. You can make this up in advance and freeze it, just don't add the heavy cream until ready to use.

I like my portabellas on the grill with my rare steaks.

Nothing beats a grilled pork tenderloin except a grilled black angus filet.

everything is better on a charcoal grill:

My neighbor's peach tree grows a couple of limbs onto my side of the fence, so I picked a couple.

1) If a tree grows over the fence, the neighbor is entitled to whatever he can reach, right?

2) Has anyone ever seen peaches that were white inside when ripe??

BAKED STUFFED CHICKEN
6-7 lb. chicken
1 cup melted butter
1 cup stuffing (Pepperidge Farm is good.)
1 cup uncooked popcorn (ORVILLE REDENBACHER'S LOW FAT) Salt/pepper to taste

Preheat oven to 350 degrees. Brush chicken well with melted butter, salt, and pepper. Fill cavity with stuffing and popcorn. Place in baking pan with the neck end toward the back of the oven. Listen for the popping sounds. When the chicken's ass blows the oven door open and the chicken flies across the room, it is done.

I had a friend who raised mushrooms in his basement. He sliced some up and put them on several pizzas that were being served at his fiance's bridal shower. Turned into a great party but his fiance dumped him. Go figure.

I didn't see the show on ships but I saw a neat documentary on the joint strike fighter. The competition was between Boeing and Lockheed to see who could build the best fighter to meet the needs of the air force, navy, and marines. The Lockheed F-35 won the competition.

Lockheed F-35 won the competition.

Yep.. the YF-22 Protoype also... I've got several pics of this strange bird flying before actually being given the contract... Boeing cried foul play so Lockheed has allowed them some of the contract... as also I understand Boeing and Lockheed are also working together on the JFS?? may be another contractor not sure??

I've heard that the Navy's inputs were largely ignored in the JSF, the primary requirements being folding wings and some other modifications to facilitate below deck storage on carriers. The Navy will probably end up doing the same thing with aircraft that we do with small arms. We use M-14's 'nough said!

Last night I spotted a fly in the kitchen. It landed on the edge of an empty tupperware container on the countertop, and it mocked me.

Driven by beer and machismo, I slowly and gingerly picked up a Chinese restaurant menu which was at hand (note how much we use the kitchen for cooking), folded it carefully, judged its stiffness and weight for the task with slight movements of my wrist, then exploded in a downward stroke which injured the fly, but also brought my index finger nuckle hard onto the opposite edge of the tupperware dish.

I got the fly; but I broke the skin on my finger --- and it was throbbing so bad that I kept an ice cube on it for about an hour. The finger is OK today, just a little stiff, thank you.

Considering the ratio of my weight to the fly's, I have to admit that the fly probably won the contest on points.

OK, for anyone interested here is the recipe:
If you want the steam roast part for the goose or turkey let me know. Makes the juiciest, tastiest goose or turkey ever. Since the interest seems to be in the stuffing, I will put that part here.

2 med onions, minced
4 tbsp butter
10 portabella mushrooms sliced (if you are not a mushroom freak, use 4)
1/2 tsp pepper
1/2 cup port wine
3 stalks celery, minced
1 tsp salt
3 cups croutons
1/4 tsp allspice

melt butter in fry pan (med heat). lightly saute onion and celery, add mushrooms. stir in croutons, salt, pepper, allspice. pour wine over and mix gently. remove from heat. stuff into bird loosely. roast 2-3 hours.

my favorite stuffing ever. definitely best with goose (sweetness from wine is very complementary) but also great with turkey. enjoy

I ate some mushrooms once and I woke up in a field at night with only one shoe. Do you think that was a sign?

Anyone wanna hear a bat story? If not, don't read any further!! :)

Some friends and I were having an estrogen-fest at my place the other night - a double feature of chick flicks. Just as the second movie was finishing up, I notice a HUGE bat flying through my dining room into my living room. I swear he was buzzing us, in that choppy, bat kind of way.

We all laid flat against whatever furniture we'd been sitting on. I couldn't reach the light because every time I'd reach up, the bat would come back at me. Did I mention this bat was HUGE?? My dog was jumping and barking at the bat just adding to the chaos as she tried to catch it.

We made it out to the porch and stood behind the screen door, watching the dog jumping and the bat toying with her. We were laughing and screaming so hard we could barely move.

Finally, we didn't hear the dog barking and realized she'd chased the bat upstairs. I was the brave one who went to find out that she and the bat were in my bathroom. I got her out of the bathroom and called my son (who was at a party a few blocks away). He and his friend came to our rescue. The bat was removed safely while we hid in another room.

Last I heard, the bat was telling a slightly different version to his friends...

How did you prepare the Bat? Generally speaking there is not much meat on a bat, but its like crawfish, if you eat enough of them you'll get full.

I love quahogs, clamcakes and how about a nice big fat New England Lobstaa with some creamy New England clam chowdaa on the side. Boy would some fresh native coen on the cob just top this off. Man I'm getting hungry.

I love lobter too. But I have found, in my travels, a lobster that may just put my native Maine lobster to shame... it is THAT good.

use pork ribs...boil for 20 minutes....grill for 5 minutes....sauce as you like...
