Here's an idea I tried cooking up a mess of dove, but would probably work with Cornish Hens also.
Melt some butter in a wok, or skillet
ad some worcestershire sauce, cayanne pepper, and a dash of curry powder.
put fowl in to brown, and keep turning/stirring to prevent sticking, and to ensure all sides get in the butter mixture.
When the bird is about done, turn the heat down, add sliced rings of onion, then bell pepper, then at last chunked up tomato.A
dd a can of undiluted tomato soup concetrate (like Campbells, but don't add the water)
taste and reseason with the worcestershire, cayenne, and curry powder to taste (the soup thins out the taste, I tend to like mine on the spicy side) when the taste is right, cove put on lowest possible heat, and cook up some rice, while the rice is cooking, the seasonings have time to flavor all the gravy. stir occaisionally.
serve over the rice. tastes like a combination of Italian/Cajun Food
