Old Fashion Chili Recipe.

1 pound ground turkey
2 cups ketchup
1 cup diced Jewish pickles
5 oz bleu cheese
1 cup diced pimento
2 tbls peppercorns
4 oz Hienz Pork Gravy
1 can green olives
1/4 cup salt
1/2 cup fish sauce
2 bananas
3 cups peanuts in the shell
1/2 bottle bourbon

Mix all together, except the bourbon, in a plastic bag then throw in the trash.

Drink the bourbon then go out and treat yourself to a nice Italian restaurant.

We are making chili this weekend for our halloween party. Probably grab a recipe out of bell's best.

Make SURE it has beans in it....It's not chili if it doesn't have beans...It's sloppy joe meat sauce...

Ray whether you put beans in it or not makes little difference when your first 2 ingredients are ground opossum belly and stewed maters.Still not chili.

I don't mind beans in my chili every now and then... but if you're entering into a competition chili cookoff thing there's definately no beans allowed.. Not talking

I don't know my recipe by heart yet. I've only made it about 6 or so times.

Funny story though.....
The first time I made it, it was for a local Chili Cook Off. I found a base recipe and modified it a bit. Believe it or not, we came in second place!!!

My whole strategy that day was I may not make the best chili, but it WILL have some spice. I guess the judges enjoyed the heat.


I know you use 3 types of peppers, dark beer, several different herbs. I'll see if I can find it for everyone.


Oh, and I use Beans!

A Real chilli has brisket, flank steak and cubes of roast. Some ground meat but its not the main ingredient. Also must have abour 5 to 6 different fresh chilli peppers in it.

2 pounds of 1 inch cubed, fat trimmed chuck
2 onions chopped
2-3 bell peppers (any color) chopped
1/3 cube butter
3 cups quality beef broth
1/2 to 1 cup of Sam Smiths Organic Chocolate Stout
1 can each black beans, pinto beans, kidney beans
2 small cans of tomato sauce
3 tablespoons of tomato paste
2 cans of chopped tomatos
Chili powder
Dash of your favorite hot sauce.

I like my chili to be simple with a heavy depth of flavor based off of the beef, so I start it like I do a roast.

In a hot pot (prefer a porcelain coated cast iron), brown the cubed chuck on all sides... about a half pound at a time or it won't caramelize, remove the meat, drop the temperature to medium and immediately add chopped onions, peppers, and butter. Sweat the onions and peppers down til partially soft then add beef broth 1 cup at a time, bringing it to a mild boil. Add the beer, meat, beans, tomatoes, tomato sauce & paste, and let it simmer for 2 hours. Add chili power and hot sauce to taste. Depending on your beef broth of choice, add salt to taste. Stir and serve 30 minutes later.

Here is roughly what I made for our halloween party, a good all around chili that really doesn't take too much prep- just throw everything together in the morning and you've got dinner waiting for you. You can eat a bowl of it, put it on hotdogs or fritos, etc.

Per large crockpot (~6 quart)
3lbs ground beef
29oz tomato sauce
2x cans of kidney beans
2x cans of pinto beans
3 cans of Rotel (or tomatoes and chiles separately)*
2 cups broth (I used beef)
Diced onion
2 stalks diced celery
3Tbsp chili powder
2tsp cumin
2tsp black pepper
2tsp salt
1tsp cayenne*

Brown the ground beef in a skillet, medium heat, crumble, drain, combine with other ingredients in the crockpot. Use the liquid from the bean cans if you want thinner chili, omit if you want thicker. Low for 8 hours.

*For one batch I used hot rotel and cayenne, and for the other, mild and omitted cayenne. The hot rotel was hot enough to make its presence known but not so hot that someone couldn't eat it. The mild was still hot enough that people that couldn't handle heat mentioned that it was hot.
