2 pounds of 1 inch cubed, fat trimmed chuck
2 onions chopped
2-3 bell peppers (any color) chopped
1/3 cube butter
3 cups quality beef broth
1/2 to 1 cup of Sam Smiths Organic Chocolate Stout
1 can each black beans, pinto beans, kidney beans
2 small cans of tomato sauce
3 tablespoons of tomato paste
2 cans of chopped tomatos
Chili powder
Dash of your favorite hot sauce.
I like my chili to be simple with a heavy depth of flavor based off of the beef, so I start it like I do a roast.
In a hot pot (prefer a porcelain coated cast iron), brown the cubed chuck on all sides... about a half pound at a time or it won't caramelize, remove the meat, drop the temperature to medium and immediately add chopped onions, peppers, and butter. Sweat the onions and peppers down til partially soft then add beef broth 1 cup at a time, bringing it to a mild boil. Add the beer, meat, beans, tomatoes, tomato sauce & paste, and let it simmer for 2 hours. Add chili power and hot sauce to taste. Depending on your beef broth of choice, add salt to taste. Stir and serve 30 minutes later.
