I love the holidays this time of year. The weather is perfect for stoking up the pit and getting down to serious outdoor cooking.
In little towns like Pearland,TX (where I live) everyone that hasn't already fired up their pit will do so at about 8AM today.
You might see a few open grills around but not for me. Oh no, we got the bigger mama. Something that has as much steel as two '56 Chevrolets with an offset firebox taken from an old stream train. I am talkin' about a wood eating, smoke making giant of a pit. Something you can throw a half side of beef on all at once and still have room for a dozen or so "beer can in the butt" chickens.
Charcoal!??! Not on your life, Pal. We got the timber all piled up shoulder high. And BY GOD this is Texas so you better like mesquite! I am talkin' BIG SMOKE!
I am going to be generating 150,000 btu at the firebox and have only 276 degrees F kissing the meat. Slow cooking, yeah baby, Texas style.

Anyway, what's cooking at your place?

Yo Fatshotbud: The rain in Spain falls mainly on the Philadelphia area , hehe. It's been raining hard since 1:00 AM, almost an inch so far but there is a slim chance of stopping by noon. Glad to hear your going to be able to enjoy the holiday. Happy Memorial day to everyone ! JonR

Ive got the Hickory going in mine. 15 racks of pork ribs, 4 briskets, and 16 chickens. Hand rubbed, memphis styled ribs, the chickens are getting drunk, and the briskets are getting the old homade Jim Beam marinade. All will be smoked on hickory, IMNSHO the best wood for smoking.

P.S. Have been smoking meats professionaly for 18 years now, I think I have it down by now. Oh No, I think I see another competition coming, just like the cheescake competition. LOL

I use Hickory too sometimes (when I run out of the good stuff). Of course the cooking media is important but the marinade/basting process is even more critical IMNSHO. Sounds like you got it going on pretty good though (even for a rookie of only 18 yrs experience).
I noticed your use of alcoholic liquids introduced into the mix. This shows you have a very creative flare and indicates to me a well developed palate (or maybe just another alcoholic who need an excuse to have a bottle out while cooking).
It's nice to see we share a common passion (I wonder if Dave cooks in the buff too).
Anyhow enjoy your cookout (try not to burn your naked, drunk, hickory smokin' ass on the pit Pal).

Livin up here in Illinois, no way was I gonna find a real pit. Everything is gas up here. So last year, I drove down south of Fort Worth and picked me up a Lyfe Tyme pit. Offset firebox, main cooking area, and four foot tall smoking area.
Neighbors thought I was putting in an incerator! That is till they ate what came out of it!

So Fastshot...Where bout's is Pearland? Do they grow Pears there? Just curious. My mom lives in San Angelo so I's curious, if I was visit'in her wood it be much of a trip ta come over to ya'lls place fer some vittles? Course it takes me awhile longer ta get places these days seein's how I got a littl hitch in my get-a-long...

Now ya know I'm justfunnin ya doncha?
Every time I visit my mom for more than a couple days I leave with a full blown Texas Twang... kewl!

$heeeet... You mean to tell me that puttin' a few dogs and some burgers on my Kenmore gas grill isn't BBQ-ing ??? It DOES have the side burner and two additional racks on the inside !!!

Geee... I thought I was hot stuff... I guess not :o(

I use gas too. That is what I light the wood with. I heard George Foreman has something in a grill too.
