Just wondering why the high carb low fat? What about protein in the mix? Unless you have a good reason for swithching ie/doctors recommendation, you should rethink the high carb diet IMHO. High carbs ultimately equals high calories, even if you reduce the ammount of fat in your diet. Generally, fat doesn't have the same effect on your body because it is a "hormone neutral" nutrient. It doesn't cause the spike in insulin that high carb foods do. It is the insulin that tells your body it is time to pack on the fat....store it for the winter or whatever. Anyway, less fat in a diet is not a bad thing, especially if it is saturated etc. Another thing is that you don't want to cut the protein. Without some protein to balance out your high carb diet you will be hungry as a bear after your insulin peak starts to decline.
As a disclaimer, I am not a dietician or doctor, but I have a large interest in nutrition and biochemistry, so these are just my thoughts.
