My fridgadoor rests in a room at about 80 degrees all summer. With the johnson controller, it kicks on quite often to maintain my set temp of 68-70. The RH will drop only while it runs, now beings it runs a few times an hours, RH will go as low as 40, but only for a moment. Within minutes, my RH climbs to 70-74 with the addition of plenty of spanish cedar and a pound of 65% climmax meadia beads. Plenty of moister will build up inside the more it runs. But, this is only true if you use the johnson controller, it will shut of the fridge before the defrost cycle comes on. So actually, high humidity is your concern, but climmax beads will combat this.
