New Toy: Wood Pellet Pizza Oven

Virtually no instructions, so I'm learning as I go.

Used twice so far.
Best pizza I ever made. And I am still learning how to use it.

Anyone have experience using one of these?

No temp gage.
It was a gift. I didn't ask the price.

It's a Big Horn basic pellet oven.
12" stone.
Less expensive than the Ooni (?) I'm sure, but it gets hot fast.
I'm just trying to figure out what door/panels/secret passageways I should keep open or closed when trying to light the pellets.

I have 6 kitchen thermometers ...the kind that go in ovens or refrigerators...round that stand up on their own and have built in hooks on the upper part of the thermometer...
They are stainless steel and NSF APPROVED...

TRIED TO SELL THEM FOR OVER TWO YEARS AT FLEA MKTS AND YARD SALES .. ONLY asked $2-$3 dollars each...
They cost $10++ new, they are all in very good to new shape...

The cheap **** I try to sell to are cheaper than C.H.E.A.P. ASS CHEAPSKATE PRICKS...

HOW MANY DO YOU WANT FOR FREE?

On a somewhat related note... and absolutely no help to you at all... I ordered a new Weber Smokey Mountain 22" Smoker. Will arrive for in-store pickup early next week.

Can't wait to get smoking again... with real charcoal and wood. No pellets. Angel

I've smoked on my Weber kettle. Then using my vertical smoker with propane (and wood/charcoal).
Then my pellet grill/smoker.

This is a gift from my wife, and I just used it for the third time tonight.
I added a small fan at the fuel source and this baby purrs.

Cooked a pizza (meatball, pepperoni, roasted pepper and artichoke), a calzone (just the meatball and roasted pepper), and wings.
I cooked the wings first and then charred them in the oven. Smoky, crispy and fuggin delish.

And for the record, pellets are "real" wood. The ones I buy have no binder.

Greatly appreciated, but those aren't needed.

What I will be getting at some point is an infrared temp gun. It seems that the temperature on the pizza stone is important. This baby gets up over 800F when properly running.
I might even get a pizza steel that fits so I can cook up some steaks.
