Christmas Pork Roast

Here's what I made for Christmas dinner
6 lb pork roast tied
stand roast on end and make two holes through length of roast with long handled wooden spoon.
fill holes with sundried tomato pesto
season roast with salt, pepper, garlic powder.
roast in oven at 325 until it hit 145 deg, about 2.5 hr
use drippings and add white wine to make a sauce. add a little butter to sauce as it finishes to give it a little polish.

end result is a pork roast that has centers of red/green pesto (very festive for Christmas). it went over very well
