I did once about ten years ago and didn't like the results...turkey was too salty...used Alton Brown's brine as a base and added spices and herbs and apple juice, but not more salt...

It is the primary reason for brining: a salt solution with a sweetener, like molasses, brown sugar, honey, etc. I left the turkey in the brining solution for two full days...that may've been the culprit...one day might've been all a perfect turkey needs...


the turkey was very tender and juicy, cooked all the way through, but too salty...if I ever do it again, I'd just brine overnight...

So,at 11:56pm i'm sitting in my office enjoying a San Cristobal Elegancia and I notice my wife comes out of the bedroom. She goes down the hall and a few minutes later she comes back carrying a samich. I asked "your sugar lvl dropped?" she said "yes" then she asked me "how does that cigar taste?" I replied "It's ok, not the best I have had but not bad at all." she then replied "Well I am surprised cause it smells like ASS!" and back to bed she went. Eh?

Well... finishing up in missouri.

The woman is not thrilled about the location. Not much to do here... on the upside houses are ridiculously cheap. 250k gets us more house than we want... actually harder to find a house small enough for us.

I have a salmon recipe that's either really, really good... or the wife keeps asking me to cook it because she doesn't want to cook.

1 big salmon fillet, rub with a little olive oil, sprinkle on blackened seasoning, fresh cracked pepper, a pinch of kosher salt, and minced garlic on both sides. Place in an aluminum pan, then put some garlic butter on top of the fish. I use Shamy's.

Cover with foil, bake at 400 for 25 minutes.
