No chit.

There are five different grocery stores within 5 miles of my house that sell whole brisket. What sucks is that I have to go 15 miles for an over priced tri-tip.

Come to think of it I haven't made hog's head cheese in about a year. Might go pick up a twin pack tomorrow.

We have a local meat market, Augusta, GA, that sells locally raised beef and pork. With call we can get a full brisket. Our Publix and WalMart also have them occasionally.

All we have down here is HEB, but really, is there any better?

Yeah, the big stores, publix, etc...don't carry it. The butcher at my local publix is a patient ( his grandson is I should say) and I have asked him about it. He says they don't carry them because there is no demand...the people here don't know what todo with a GOOD chunk 'o meat. I guess it scares them....not to mention "It's to fatty"....they sell the trimmed "flats". I asked if he could get me one he said they come to the store already semi trimmed... He could get one but at nearly $3 a lb....the local guy is $1.79....The Wally store down here caters to the local crowd as well, no demand no product...simple economics....further north you ( Georgia border) you can get them but not here....I kinda like the local guy....he's cool!
Down here the big stores are Publix, Sedanos, and the wal mart, no real southern chains?

Yeah, a few....but the little carneceria (meat market in Spanish) is the one I like for beef/ pork... A lot of the little ones went under with the economy. Some are trickling back. This guy survived by being good with his customers. Cut to order steaks, etc... At good prices.

It is a little Spanish carneceria, the guy is great. He looked at me funny when I asked him for one untrimmed. ... He asked if he could come over for some..

The pork butt looks awesome!

I never bother with the soaking and the injections. Just a good rub and a long smoke. Friggin 9 pounders take 18 hours in my Weber Kettle. Totally worth it, but I need to man up and get me an actual smoker.
