Do the 2018, you always want the freshest rose.

You are going to see more and more roses. People are beginning to understand how delicious they are. Producers are making more roses every year. We have over 100 different roses this year. Probably the biggest mind set change is people are beginning to understand roses are their own unique type of wine. They are not red or white. Though they are more like a red wine than a white wine. For me, I only want a light chill on a rose. Say about 55 degree F. Also I find there are certain grapes or blends of grapes I prefer in a rose. 🍷

1992, Urbans St Hoff Riesling Gold Cap, Mosel, Germany.

Waldorf salad.
Triple Brie, Rembrant Gouda, Le Gruyere AOP.
Steamed Brussel sprouts with brown butter.
Steamed green beans.
Aged prime rib medium rare with au jus, pepper, and salt.
Sliced Honey Crisp apples and Bosch pears.

The celebratory all moved in dinner.

Yes, CL, I do have a wine cellar. That was a must have with the new house. Took about 2 months to build. Decent size, holds about, well, a lot of wine. The cellar is way cool. All brick with a floor of granite pavers that have about 100 years of use . The floor has a European cobblestone street feel to it.. Slightly arched ceiling. Weeping mortar. The racking is inset into the walls. Took 2 five gallon pails laid on their side one above the other to create the openings the racking goes in. Totally a midieval look. Found an old monks cell door years ago. It completes the look. Turned a number very old black metal wall sconces into LED lighting. Now the next project. Building the 2 adjoining rooms in the basement. I have some very specific goals for them.

2017, Bellefontaine Cabernet Sauvignon, IGP Vin de Pays d'OC, France. $7/btl. Fantastic for the price! If you see it try it.

93 points to my palate. A noise of blackberries, black raspberries, graphite, cedar, and leather. Good vibrant acidity, silky smooth tannins, dark fruit flavors, with notes of forest floor and earth. Rich, heavy mouth feel. A surprising amount of lingering finish. This is case worthy, better than many $20 to $30 California Cabernet Sauvignon that I have tasted.

Austrians are sneaky like that. Exept for Meinklang rose, it's a loud one. But the cedar was the loudest! I quieted em all down by finishing the bottle. Bought 2 cases of it today, not a whisper from either case.
