Choice ribeye... kosher salt, fresh cracked pepper all over it. Let it sit on the counter for a couple hours. Cook it over flame for about 3-4 minutes a side. when it hits 125-130 temp... let it sit for 10 minutes and eat it.

Or... season it the same, vacuum seal it and sous vide it for a few hours then sear it.

Part of the reason I've not tried steak is it's not cheap and I don't want to screw it up. But I've ventured this far into beef, figured it was time to try it.

I bought a choice 1lb bone in ribeye, sous vide w/ s&p at 129 for 2 hours, seared over very hot charcoal grill (accidentally left the vents WFO after grilling the corn) and 5 minute rest.

Oooooof. I'm stuffed to the top of my belly.

Yuengling to start, followed by bread and a house salad, then shared appetizer sampler. Hot boneless wings, tater skins and rattlesnake bites. Main course was a 16oz ribeye w/shrooms and smashed taters n gravy. Wife had the 14oz with smashed taters n gravy and shrooms n onions.

Tank got to eat about 6oz of my steak plus 2 tater skins for dinner. I cut up the steak and rinsed it in water before I gave it to him. Was a bit salty from the grill, so I wanted to get most of that out.

Tasty for me... not good for da puppy.

It's no wonder that boy is attached to my hip and obedient. He spoiled f'n rotten.

Couldn't sleep worth a damn today.

Made some chopped cheesesteaks with leftover brisket, onions, horseradish, and provolone.

Wife n boy made it home from Wisconsin.

Back to work in 30 minutes for a week. Can't wait till this is over, wife n boy agreed to go tent camping with me next week. Boy's slept in tents in the back yard a lot. Wife has never and has always said she never would. But 2 years without a camper seems to have changed her mind. We'll see. There was only one site open at Indiana Dunes, hopefully it's not one of the sites that's always underwater.
