It now takes over a month to finish a 500?
Oh the good old days when we'd churn through one in two weeks, and the 500 was a fun and funny read.

Good Tuesday Afternoon to All! Had a great visit with one of our grandsons this morning. This one is a nurse and is hope for month before returning to work for a US contractor in Haiti. He needs some R&R after that place.

Cowboy Skillet: potatoes, tomatoes, onions, scrambled eggs, chopped chicken fried steak topped with sausage gravy, with wheat toast...ate half and will finish the other half for dinner...honestly, coulda been brunch and dinner for two

Cowboy Skillet: potatoes, tomatoes, onions, scrambled eggs, chopped chicken fried steak topped with sausage gravy, with wheat toast...ate half and will finish the other half for dinner...honestly, coulda been brunch and dinner for two

Cowboy Stew
2# hamburger
1# smoked sausage
1/2 cup cooked diced bacon
2 cans chili beans NOT DRAINED

1 cup frozen corn

In a dutch oven cook the smoked sausage over med-high heat untill browned, drain any grease and remove from the pan.
Add the hamburger. cook until no longer pink, drain any grease.
Add the rest of the ingredients, cook over med -high heat for about 30 minutes until potatoes are tender. If stew is too thin, thicken with a bit of corn starch.


I would think this would be a nice crock pot meal too. I'd probably add some hot sauce to add a bit of bite to it. It seems like a large batch so maybe cut it down depending on the number of people you are cooking for. Something good for the winter, stick to your ribs type of a meal. Make a batch and freeze some portions for grab and go work lunches.
