Button Quail.
We got 4 of the little things, all different colorations. We let them run around on the aviary floor. They're only about as big as a chicken egg. They jump when they get spooked so you have to be careful they don't break they're necks on something above.

cute, where'd you get them from Barry? Can they really bust their necks by jumping when spooked? I guess if they're grassland critters, there isn't much in their native environment that they could bonk their heads on.

Hi Bill, I got them from a friend here in Houston but they come from China. I don't know much about their natural habitat but they are being bred as exotics and there are some that are very expensive. Kind of like some of the finches.

Johann! Long time no see. I'm pretty sure that we have 2 pairs. If they mate that's cool with me. We got them somewhat as a novelty but they do a good job of cleaning the aviary floor.

Quail Stuffed with Sausage

2 cans pineapple juice
1 can frozen orange juice, from concentrate
1 cup honey
6 quail, plucked and cleaned
1/2 pound ground hot sausage
Everglades Seasoning*
6 strips bacon
* Can be found at most supermarkets


In a large container, mix together the pineapple juice, orange juice, and honey. Marinate the quail in this mixture overnight, refrigerated.
Stuff each marinated quail with a small rolled ball of the hot sausage. Dust each quail lightly with Everglades Seasoning, then wrap each quail with a strip of bacon and secure with a toothpick. Smoke the quail over indirect heat for 2 to 3 hours.
