For tenderloins I just coat them in garlic salt and fresh ground black pepper, roll them in some kind of frying mix (Dixie Fry is good) and fry them in cast iron at medium heat in olive oil. Watch the heat, you don't want to overcook these babies.

Plain salt and pepper and fried in butter is good too. They don't need much as they are freaking aawwwwsome all by themselves!

I do the tenderloin about the same as you.

The backstraps are so easy to dry out.

I let them sit on a marinade for about 3-6hrs. I'll put in some what's-dis-here-sauce, 1 can of coke, some minced garlic, olive oil, salt&peppa, and my secret ingredient, 1 cup of 10yo single malt scotch.

Bass,

somthing i did this summer with a pack of 4 small tenderloin steaks...

i sliced the steaks against the grain into small thin strips... seared the strips in a small skillet with hot olive oil ..just lightly seared on each side.

In a seperate skillte, sliced up 1 green pepper, 1 onion, small container of fresh mushrooms, with some spicy mrs. dash.. to season.. simmered all the vegetables untill almost soft..

threw in the seared tenterloin strips.. stirred it all up.. and let cook until the veggies were tender, then poured in a can of dark gravy.. and mixed all together.

serve over mashed potatoes, or wild rice!!

it was just something i threw together. The meat was VERY tender, and very tasty. It was a break from the norm from the standard grill or pan frying in a skillit.

Works GREAT with pheasant. i did the same with the birds i posted a couple weeks back. Except i marinaded the birds in a sweet teriaki marinade for a few hours before slicing into strips!!!! very very tasty!!
