I'd venture a guess that that is a thermometer to tell when the bird is done. Possbily with a braided outer cord to protect the inside parts from temps...

Bingo. Mrs Tank got it right. I have a digital temperature control unit that monitors the temperature of the smoker and the meat. Keeps the temp where you set it then lets the fire die when the meat reaches the set temp.

That is, indeed, the meat thermometer sticking out of the bird.

Looks good. I smoked one yesterday for the people in my office. 10 hours at 150 degrees over mesquite wood. Got two 25 pounders going on the pit Wednesday night.

Nice bird Bro.
I am doing the same brine recipe, but doing it at a much lower temp than listed.
