I'll admit that my obsession with coffee paralells my obsession with cigars. Brutha chipslave makes some good points about coffee storage. Here is my 2 cents:

The thing about storing coffee is that you should not do it at all. Coffee is not meant to be stored for an extended period of time. Once roasted, the beans begin to degas. Some of the serious coffee freaks will say that roasted beans will only last 2 weeks before they start to lose their flavor. Ground coffee has a shelf life of a few days.

If you must store the coffee, it is recommended to only buy the amount that you will use in a week. Store them in an airtight container away from light and moisture. Moisture will interfere and dilute the oils in the roasted coffee. This is why refrigeration is not recommended. This will affect the taste. It can also affect the grind and brewing process. Refrigeration can add too much moisture to the beans. Freezing takes too much moisture from the beans.

contendertotes, if your coffee only lasts for 2 weeks, you are probably not doing it any justice by freezing it. I would just store it in an airtight container in a cabinet or cupboard. If for some reason you needed to store it for an extra week, you may want to think about freezing the beans. Beyond 3 weeks, freezing is probably not doing you any good.

I buy my coffee in bulk, when it goes on sale, and freeze the beans. I grind enough to last a week and put that in teh fridge. I have never, let me repeat, I have NEVER had a problem with the beans losing any flavor at all.

I have had a lot fo different coffees, with Kona being my favorite. JBM is good, but not good enough to command that amount of money from me.

I am not a coffee snob or afficianado, this is just my humble experience.

Thank's for the advice , but i too have not had any problems with freezing it for a couple of weeks. as far as i know it tastes the same as the first day.
But do appreciate the input.
