Common excuse. Remember that the whole house doesn't need to be cooled, only the room the humi is in. Store it in the bedroom and buy a window AC for the wife.

The thermostat is just not sensitive enough. One click and it's 75 degrees, one click it's 60 degrees and has sucked the RH down to 50%... Has anyone ever changed out the potentiometer style thermostat control for something more sensitive, say an A/C style thermostat?

Or does anyone have any other suggestions?

I am in Orlando. 76F in the house 24/7 and I have never had a problem. The reason is that EVERYTHING has been frozen.

If you freeze your cigars before putting them in your humi, does 80 degree weather matter?

Theoretically, and if you have frozen them properly and adequately: NO.

What RH would I need to keep if I maintained approx 64 degrees to keep the cigars smokeable (ie enjoyable)?

Whatever you like. My preference would be in the higher 60%'s. No right or definitive answer to your question.
