Well... it was about 147 when I foiled it, but that doesn't matter. It got 4 hours of smoke, so it has pretty much taken all the smoke it's gonna get; and the chunks I put in there weren't smoking any more anyway.
I put it in a foil pan, poured a bottle of Stubb's chipotle butter and a can of beer on top of it and foiled it. Should be finished in 3-5 hours... then I'll let it rest for an hour and slice the flat, cube up the point and make burnt ends!!
Last time I did not leave them on long enough. This time after I slice 'em up and sauce 'em I'll let them go another couple hours.
I have a beer craving.
