Wow. I mean... holy flippin mackerel!

Brisket came out perfect! I may have gone a bit longer than I should have it is so tender. Temp was 192 when I pulled it off, then I cubed it and sauced it, then put it back on for a bit. Bout noon I'll put da ribs on.

One more month and one of my credit cards will be paid off, still paying for being an idiot in college and using them too much. Then was unemployed for a few months right after buying our house and did the whole reconstruction on credit...

So, that's exciting. Got 2 more to go.
