Bad BBQ, meet McRib.

McRib, meet Bad BBQ.


I'm from the Northeast.
We know seafood, we know pasta, we're almost good at knowing steak, and we will someday be good at knowing BBQ.

But not yet.


Case in point.
At a picnic last year.
A large foil pan with ribs falling off the bone while getting a slight char on the grill.
Can't go wrong, right?

Completely devoid of flavor.

Find out they're boiled, baked, then grilled to get some black on them.
And topped with Hunts BBQ.

Local outfit offers Alabama sauce. First time I've ever seen white BBQ sauce. Wife likes it....I can't get past the color...for the most part, I find the regional distinctions amusing and with a lot of overlap, it would be challenging to categorize many in a blind taste test....for me anyway. As long as there's more zing and less vinegar taste, I'm good with most of them.

Big Bob Gibson's white sauce for chicken (guess one can use it on what ever they like):

2 cups Mayo
1 cup distilled white vinegar
1/2 cup apple juice
2 teaspoons prepared hourse radish
2 teaspoons ground pepper
2 teaspoons fresh lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper

Mix in large bowl and use as marinade, baste or dipping sauce. Store in air tight container in the frig up to 2 weeks.

Mikekoz, I've never had good pork outside of Texas and Louisiana unless it came off a whole hog. I just don't get why the hell people just want to shred apart the meat, if you're doing that, you might as well just make carnitas, the taste is just so much better imo.

Come for a visit and I'll show you how it's done.

Seriously? The only good pork comes from cooking a whole hog? Guess I'll have to set aside 20 hrs and empty my fridge to store the 120 lbs of leftovers next time.

Don't get me wrong, I love me a good pig roast but to feed a few mouths and have some leftovers for lunches, I think a whole pig is a bit overkill.

Whole hog is bland, everything tastes the same, and you ruin the good cuts to make a mountain of flavorless dribble.

Just kidding, brother. I do make some of the finest pork shoulder around though. At least that's what I've been told.

I do like how the TX people season their meats, however. Don't need much more in a brisket rub than salt, pepper
and chili powder. For pork I might add some raw sugar and maybe some granulated garlic.

Most people over think this stuff and put every seasoning they have in a rub. Same with injections.

The KISS method works for smoking meats. Keep It Simple, Stupid.

I stand corrected...I had no idea the perennial fast food giant had developed their own BBQ style. All hail...er...well..those that think the McRib is BBQ...yeah...and one crappy cook...doesn't make it bad...it just makes him a bad cook...yeah...you hang on to that one.

Cooking a pork shoulder and gonna do the vinegar based Carolina BBQ. Been craving it for a couple weeks. Any good recipes that I can't find on the net?

Was gonna ask Ram or visit a BBQ forum but screw it... I' lazy.

Yep, that's pretty much the one I used. Except the one I found had some mustard and little bit of a couple other minor additions that I don't remember off hand but pretty much the same as you laid out above.

It came out pretty good.

I used some light examples to suggest otherwise.

It's a common phrase to say "there is no bad pizza" or "there is no bad sex". etc.
Well, I've been to pizza hut. And let me tell you: the sex is terrible.
