Morning all, stay safe and don't be bad.

Speaking of BAD, we got SO much rain and wind over the last two days that the pool looks like the muddy MS River!!! I had it spotless and now this, I'm gonna have to let it warm up again here before I get back out there and get to vacuuming and cleaning.

Also, went without power two nights ago for a couple of hours. That was a first since moving here over 2 years ago!

Was it any good?

Pretty decent. It could have been a bit hotter and needed a few thai basil leaves.

Now I’m full and have no motivation to go back to work so there’s that!

I tried making french baguettes over the weekend. Since everyone is on this bread making binge, I thought I would try.

It was a ridiculous fail.
Unmitigated disaster on multiple levels.
Took days of trying to get the dough to act like dough....
Constant rolling, kneading, putting back in a container and cleaning the surface again....

Came back with the saddest, flattest looking baguettes ever.

Pillsbury. Preheat oven. Open tube. Bake

OK, maybe it's cheating a little

I mean... if I just want good bread I'll spend a buck and buy a loaf.
I was more curious why everyone was suddenly baking... and whether that was something I could replicate.

I did not successfully answer my first question (seriously... why the fuxk are people baking so much!?!?? there's so much cleaning required!)
And my second question was answered with a resounding NO.

Maybe your yeast was no good? did you proof it first? I've made that mistake, lotta work for paperweights.

Idk. I only mess with the easy ones, wheat bread, banana bread, etc. Guessing the rest is dam good once you get the hang of it.

No yeast... that was part of my problem. I tried "cultivating wild yeast".... I had a starter I'd gotten going, which seemed ok. Added that to the recipe....

Which was wildly unsuccessful. That was one reason I couldn't get it to rise in the first hour or two, and had to let it sit and rise overnight.

I've got a packet of beer yeast, 'll try that next time.

Other things I discovered were a mess mid-baking? My goddamn scale was literally reading at 50% of the actual weight. I had no idea until I threw my nearly full beer can on it out of curiosity and it came back at about 6oz.

That explains it. If it were me , I'd get the regular yeast, too much work for potential second fail. info about the substitution:

Along with other Saccharomyces species, brewer's yeast is used to brew beer and bake some breads, and can also be used as a nutritional supplement in an inactive form. ... While brewer's yeast can be used to bake bread, most bakers use baker's yeast specifically, a sweet and less bitter culture of Sacchraomyces.

Also read you'll need to use 2x's the amount called for regular active dry yeast

I scored 9 packets of yeast during the panic the day of the California Wuhan zombie shutdown. Haven’t seen yeast packets for the 8 weeks since.

I do Cuban bread, sourdough, bread sticks, and addictively sweet yeast rolls like we used to get in school lunchrooms. Got those all pretty nailed.

Now I’m on an Asian kick which I do occasionally do.
