Last night I had a pork loin with bacon and pan sauce, with fresh corn and curry rice. For dessert I had frozen black grapes with agave syrup and oat milk.

Pork lion wrapped in bacon is my default way to do a pork loin.
- Salt and pepper the loin, sear it on all sides in a cast iron skillet.
- Wrap it in bacon.
- Return it to the skillet and glaze it with real maple syrup or honey.
- Put the skillet in a 350-375 oven to cook until the loin is done (baste it with drippings periodically if you think of it).
- If the bacon isn't crispy when the loin is done, broil it for a bit to crisp it up.
- Pull it out and let it rest for a bit then eat.

Pig wrapped in pig... mmmm....

Pretty much the way I taught wifey how to do it too.

Funny story... she serve the left-overs as a treat after bible study, but over half of them were Jewish. We all had a good laugh... need I say more.🙄
