Hmmmm, had never heard of that, so never looked for it. It's lean like Canadian bacon, but from a different part of the pork. I guess if you want a leaner bacon, it's worth a shot since it's about the same price as regular bacon. But part of the goodness of regular bacon is the crispy fat, right?

Bacon comes from pork bellies. Pork bellies contain FAT. That is what makes it taste so damn good!

However, I like pork shoulder, too. It's what I use to make pulled pork and that is also delicious... so I can't see where you could go wrong. Even if it sucks, it's still gonna be awesome. It's bacon.

Jamie,

why Cottage Bacon and not Pork Belly Bacon ?

I eat bacon a couple times a month and I want the good stuff. Maybe the butt bacon is better. If so, I will eat it , let us know...

Well honestly I'd never seen it before, and I was in Cave Junction at my favorite meat shop on my lunch break and I saw it. I ate Linguica spaghetti for lunch (Henry Weinhards root beer) and grabbed a half pound of the cottage bacon and a pound of garlic Land Jaegers (German pepperoni/salami things)

Extra smokey spicy all pork sausage that is a Cajun favorite! A rich and savory smoked sausage that has been marinated in white wine. Onion, garlic and cayenne make this a very zesty sausage. Add to jambalaya or gumbo for an authentic Cajun experience.
